image url=""Lightened up Sweet Potato Pie with Special and Salty Pecan Crust ([[ gluten free cheesecake recipe easy]] free, low carbohydrate!)

Brain does not compute.

In fact, I recall studying my family's faces, curious as to what their reactions is always to this delicious chocolate dream pie.image class="left" url="" The first bite managed to get appear that these were delightfully satisfied; yet once they got past the second bite, their encounters turned to discomfort.

Turns out it had been so filling they felt like their trousers might burst open up. Oops. They probably would have had space if they could have worn yoga pants.

The last couple of weeks I've been testing out pie recipes for Turkey time, which sweet potato pie continues to be among my favs. It's amazingly similar to pumpkin therefore i may even replace my favorite dessert because of this uber creamy, lovely and generously spiced gem.

Add the pecans, salt and brown sugar in the food processer and process before mixture starts to resemble sand. Add melted butter and pulse again for just a couple of seconds.image class="left" url=""

The mixture find yourself looking something similar to this. Use your hands to press it down also to the sides. If you want a thicker crust, you can include more pecans. Sometimes I love adding several gingersnap cookies plus some flour. You'll find the recipe to my pecan gingersnap cookie crust here

Up coming, you'll bake the crust for about 10 minutes. How easy is that?

Mmmm the creamy filling up will go in then you'll pop this bad boy back in the oven.

…AND YOU THEN GET THIS. I would recommend providing this pie with a little coconut whipped cream!

1/2 teaspoon kosher salt

1 1/2 tablespoons unsalted butter, melted

For the filling up:

1 1/2 teaspoons cinnamon

1/8 teaspoon floor ginger

1/8 teaspoon surface nutmeg

pinch of ground cloves

1/2 tablespoon vanilla extract

To roast the sweet potatoes:

Preheat oven to 400 levels F. Poke nice potatoes using a fork a few times, then put on baking sheet lined with foil. Roast for 45 moments or until knife tender. Ignore oven to 350 levels F and established sweet potatoes aside to cool off.

To help make the crust:

Place pecans, sodium and sugar within the plate of a meals processor chip and pulse until the nuts commence to become very crumbly and appearance like wet sand; this should take significantly less than 1 min. Next add the melted butter and process again. I like to taste the crust at this point to find out if I might need to add more salt. Dump the blend right into a 9 in . pie skillet and press crust to the edges evenly with your fingertips. Bake for 10-12 a few minutes, being careful not to overbake. I take mine out at 10 minutes.

To make the filling:

While the crust is baking, you could start making the filling. Scoop filling out of cooled roasted nice potatoes and peel off away skin. Place in a food processor chip and procedure until somewhat even and fibres are eliminated. Next add in every one of the elements and spices except the egg and egg whites; procedure again until soft and creamy. Add egg and egg whites and procedure once again until easy. Pour filling up into ready pie crust, smoothing over best. Bake at 350 degrees F for 40-50 a few minutes or until blade or toothpick put into the middle comes out clean. Allow pie to awesome to room temp to help set the pie. Serve with new genuine whipped cream, coconut whipped cream and/or your favorite snow cream. I really like portion my pie warm therefore the glaciers cream melts on top.

Serves 9.

TO MAKE DAIRY FREE: use a vegan buttery stick in place of the true butter.

TO CREATE PALEO:: Make use of coconut sugar rather than brown sugar.

You're gonna judge me. But, I have NEVER had special potato pie! I was raised in Canada, and we just didn't eat it.

BUT I enjoy sweet potatoes, pecans and all things special and salty therefore i NEED this!

P.s those up close shots? I wanna JUMP IN! Pinned!
